Ambala Cantonment is a transit town first and foremost — a railway junction and a stop on the Grand Trunk Road — and its food reflects that. The dhabas near the bus stand have fed travellers for generations, the breakfast puri shops open early and sell out by mid-afternoon, and the Cantt’s South Indian stalls have a following that has nothing to do with tourism.

Shop No. 14, Grand Trunk Road, near the bus stand, Lal Kurti, Shastri Market. Open 24 hours. The mutton curry and tandoori roti are what built the name.

Important: the “Puran Singh” name is heavily contested in Ambala and there are numerous imitators along the same stretch. Planning It Around a Train

Ambala Cantt is mostly a stopover, and the geography works in your favour if you have a couple of hours:

  • Shastri Market, by the bus stand: Puran Singh (No. 14) and Bachan Da Dhaba are a few doors apart, and one of them is open round the clock — the obvious choice for a late arrival.
  • Jagadhari Road: Garg Puri Wale for an early breakfast, Old Mohan Murge Wala and Vikram Madrasi Dosa later in the day.
  • Sadar Bazar: Jain Soda Water Factory, walkable from the market.
  • Railway Station Road: Ekyam Satvic Kitchen, closest to the station of anything on this list.

Timing matters more here than in most cities: Garg Puri Wale shuts at 3 PM, Vijay Madrasi Dosa doesn’t open until 5 PM, and the Shastri Market dhabas run late.
